Moist Walnut Carrot Cake

Ingredients :
2 cups of self-raising flour }
1/2 tsp of cinnamon powder }-sieve twice
1 1/2 tsp bicarbonate soda
2 cups of castor sugar
1 cup corn oil
4 eggs (slightly beaten)
2 cups grated carrots
1 cup of chopped walnuts

Instructions :
To the sieved flour, add castor sugar, corn oil and the beaten eggs and mix well.
Add in the carrots, and the chopped walnuts and mix well.
Pour the mixture into a 9-inch round tin or a cream cracker size tin and bake at 180 C or 350 F for 45 minutes.

**I added 1 cup chocolate chips, 1 teaspoon vanilla essence

CREAM CHEESE FROSTING: Beat 1 package (3 oz.) softened cream cheese and 1/4 cup (1/2 stick) softened butter or margarine in small bowl until well blended. Gradually add 2 cups powdered sugar and 1 teaspoon vanilla extract, beating to spreading consistency.

**u may want to reduce the icing sugar amount as its very sweet
