chicken parts - cut into small pieces / potong kecil
cili kering - potong 3 & direndam
bawang
halia - hiris halus/panjang
carrot & kobis bunga - my case only kcg panjang ada
sos tiram
kicap pekat & kicap cair
garam
minyak
method:
tumis bawang & cili kering
masukkan ayam
until ayam masak masukkan sayur
masukkan sos tiram, kicap pekat & kicap cair
kalu nak gravy bole letak air & u can thicken it by putting in corn starch
balance the taste with garam
hidangkan panas
** u can substitute with fish or seafood
**the darker the better

Here's a tried and tested Kung Pow Chic recipe yang once upon a time i memang pakar masak...
Bahan2:
Ayam - potong kecil/bite size
bawang besar (the red one potong dadu)
bawang kecil (diced)
cili kering (jangan rendam- basuh jer) about 4-5 cut into 1 inci
shallots (hiris)
spring onion (cut abt 1.5-2 inci)
halia (hiris halus)
sos tiram
kicap pekat dan cair
fish sauce (jenama Thai)
garam & gula
minyak masak
Method:
Tumis bawang putih & shallots, then add bawang besar
Bila dah naik harum, add in the cili kering, stir fry on high heat
pas tu add in kicap cair a bit, just to stir up the taste, then quickly add in chicken
gaul, pas tu add in sos tiram, kicap pekat, cair dan fish sos.
keep gaul on high heat and add a bit of water
pas tu, leave it to simmer on med/low heat for a couple of minutes, ayam kena absorb the sauce.
add in garam & gula to taste
finally add in spring onion and stir for less than a minute,
hidang.
*chinese style normally abit more to the kering side....
